Matt started his career at Leeuwin Estate Winery in 2002. It was there in his home town of Margaret River, he worked as an apprentice chef for the next two years. In 2004, Matt moved to Star Anise, one of Perth’s most highly regarded restaurants. Under head chef David Coomer, Matt developed his skills and passion for cooking for the next two years. It was then at the age of 20, and without formal qualification, that he was appointed sous chef of Star Anise.

For the next three years Matt worked with Coomer to keep the restaurant at the top of Perth’s dining scene with their Asian inspired modern Australian cuisine. Matt’s passion for food and cooking has taken him to Asia and Europe where he has discovered new ingredients and developed his style of cooking.

In late 2009 at just 23, Matt stepped out on his own to become the head chef at Greenhouse Perth. He has made a name for himself working tirelessly to create an exciting and unique dining experience. The lunch menu, a classic a la carte style, offers diners a diverse range of choice from Thai inspired dishes to refreshing and interesting salads. A share style menu in the evening is a little more relaxed and is fairly European, with particular influence coming from traditional Spanish cooking. Matt’s ability to create such diverse menus can be accredited to his use of fresh local produce and his ability to take a mature yet innovative approach to cooking.

Matt has put Greenhouse at the front of Perth’s dining culture in just their first year of trade and over the past few months he has been awarded numerous accolades. Matt took out Gourmet Traveller’s prestigious Best New Talent 2011, West Australia’s Good Food Guide’s Best Young Chef 2011 and Greenhouse won the Good Food Guide’s Best New Restaurant for 2011.

Matt is currently working in the kitchen at Silo, a completely waste-free café, brought to Melbourne by Joost Bakker (same owner of Greenhouse Perth and Melbourne) a Dutch-born sustainability architect.
