Winemaking at Coriole is a very traditional process. It is an old maxim that good wine is made in the vineyard. Fortunately Coriole owns or manages most of the vineyards where our grapes are sourced. One of the features of the winemaking is that each block or part of a block are processed separatly to maximise the potential of the fruit. This also allows the wine quality to be linked to the vineyard management of each block.
In 1977 Coriole selected Chenin Blanc to plant after being very impressed by just two wines made by the Hardy Wine Company. It is a fresh and delicate style, yet full flavoured and a remarkable ability to age in bottle for over 20 years. Chenin suits many occasions but goes particularly well with a wide range of Asian cuisines and as an aperitif.
